refactor: remove examples from workspace

This removes the examples from the pnpm workspace

Closes #1738

• Workspace lockfile is conflicting with dependencies use in examples #1738

Examples can still easily be ran with the local start package, just cd into an example and run:

pnpm link ../../packages/start
