Add CarbonDeFi to sei ecosystem app list #70

What is the purpose of the change?

To add CarbonDeFi to the Sei Ecossystem apps.

Describe the changes to the documentation

  • Add CarbonDeFi item to the appData object
  • Add CarbonDeFi 400x400 image

Target Audience: Users wanting to find DEX and trading apps can see Carbon DeFi's SEI deployment.

I will get to this but for now the eco apps page is being hidden until I get time to update all the existing apps there with mainnet versions of them.

I'm going to close this. The next version of the docs will pull ecosystem providers from the same API as https://www.sei.io/ecosystem

I don't see CarbonDeFi on there, so please reach out to the Sei on Twitter to get added.
