Don't delete SauceLabs tho (yet)
It's implicit in the files being in the test directory and long filenames cause problems on windows
easier to maintain and uncovered a few broken tests!

Turns out SauceLabs is kinda slow. This PR is checking to see if GitHub Actions can get us cross-platform coverage and be faster. That requires a lot of kerjiggering to make the repo compatible with Windows.
