TiCDC: add missing monitoring metrics

Expand the TiCDC monitoring documentation by adding many additional metrics and metric groups across multiple panels (Log Puller, Event Store, Sink, Dataflow, Changefeed, Scheduler, TiKV, Redo, Pulsar Sink, Runtime, etc.). Normalize metric name formatting (spacing and slashes), add Build Info / log metrics, and include a detailed "其他面板补充" section enumerating supplemental metric categories. Also fix the file front matter formatting. These changes provide a more comprehensive reference for TiCDC/Grafana monitoring.
