Deprecate react-unit-test-utils 6/15

Description

Remove use of 'shallow' (react-unit-test-utils) in following files:

• src/containers/CourseCard/components/CourseCardImage.test.jsx
• src/containers/CourseCard/components/CourseCardTitle.test.jsx
• src/containers/CourseCard/index.test.jsx
• src/containers/CourseFilterControls/components/Checkbox.test.jsx
• src/containers/CourseFilterControls/components/FilterForm.test.jsx

Note: As part of this work we find out paragon components were mocked on src/setupTest.jsx causing testing library unit tests to fail, since we are doing this work in multiple PRs and in order to not break other existing snapshot tests, we will unmock paragon or needed things on new tests and by end of react-unit-test-utils removal we will remove paragon mocks and unmock lines accordingly.

@diana-villalvazo-wgu My apologies, I went through this after approving and found something that could be cahnged. To make sure the @edx/frontend-platform/i18n unmock was necessary I ran all of the tests without it unmocked for each file. It appears that the tests pass without it. Can we remove that unmock for all of these test files? Unless there is a reason for keeping it that I'm missing? Thanks and sorry again for the fake out 🤦

as i mentioned on the note on each PR i will remove the mocks for paragon, react and i18n from src/setupTest.jsx on some of the lasts PRs and remove all the unmock lines.
so adding it right now is just to remove the current mock and get the functionality from the IntlProvider instead of the mock.
