Replace deprecated openapi-check with mint validate

Summary

Updates all references to the deprecated mint openapi-check command to use mint validate instead, following mintlify/mint#6835 which deprecates the standalone openapi-check CLI command and folds its functionality into mint validate.

Changes

• installation.mdx: Replaced the "Check OpenAPI spec" section with a note about mint validate auto-validating OpenAPI files and a deprecation notice
• api-playground/troubleshooting.mdx: Updated validation troubleshooting to recommend mint validate
• api-playground/overview.mdx: Updated the OpenAPI validation tip to use mint validate
• api-playground/openapi-setup.mdx: Updated the CLI validation reference to use mint validate
• Applied equivalent changes to all localized docs (zh, fr, es)

Overview
Replaces all doc references to the deprecated mint openapi-check command with mint validate. This updates the API playground setup/overview/troubleshooting pages (and their es, fr, zh translations) to recommend mint validate for OpenAPI validation.

Refreshes the installation guidance by removing the standalone openapi-check section and documenting that mint validate automatically validates OpenAPI files declared in docs.json, with a note calling out the deprecation and pointing to --disable-openapi to skip OpenAPI validation.
