Motivation
Currently the helm chart in this repo defaults to use LocalStack Community.
This will require an auth token after the consolidation of our images.
This is why this PR prepares for this change by defaulting to the
localstack-proimage, describing the usage of the auth token, and updating CI to also use a token.Changes
