Fix ENS resolution if mainnet not supported

• Check issue 350 reported by @SonOfMosiah

Proposed solution:

• Add useEnsFallbackConfig hook to easily guarantee mainnet access to all ENS-related hooks, regardless of the chains supported by the dapp.
