fix(records): add HI keyword to ATLAS HI records

Adds "heavy-ion physics" keyword to the two new ATLAS HI records.for Removes "categories" from the collision data records, leaving it only for simulations.for Co-authored-by: Tibor Šimko <[email protected]>
