Use keepnetwork/keep-client:v2.1.0 for keep-maintainer on product…

…ion (keep-network#3817)

Here we point the production instance of `keep-maintainer` to the latest
public Docker image, i.e. `keepnetwork/keep-client:v2.1.0` which
introduces support of SPV proofs for moving funds and moved funds sweep
transactions.
