Update content and rename "alcumus-info-tutorial.md" to "ecoonline-info-tutorial.md"

Due to an acquisition back towards January 2023, Info Exchange is now owned by EcoOnline rather than Alcumus.

Within this document I have updated all references to the word "Alcumus" with "EcoOnline" as well as updating the hyperlinked helpdesk email address.
