Rename the ds3231 variable to rtc. Make it easy to pick your RTC hardware with 'import adafruit_DS3231' or 'import adafruit_pcf8523'.

This was only done in PyPortal example, but "should" be done in all example.
In my case I am using this code with a PyGamer with Adalogger FeatherWing.
