fix vite dep to conform to the rest of the StudioCMS Ecosystem

This pull request includes updates to the .vscode/settings.json, packages/studiocms_ui/package.json, and pnpm-workspace.yaml files to add the vite package to peerDependencies list to prevent weird dependency issue and to conform to the rest of the StudioCMS ecosystem.

Updates to project configuration:

• .vscode/settings.json: Added "heroicons" and "vite" to the list of extensions. [1] [2]

Package dependency updates:

• packages/studiocms_ui/package.json: Added vite to peerDependencies and removed it from devDependencies.
• pnpm-workspace.yaml: Added vite to the catalogs.peers section with version constraints.
