Location of "server.cfg"

First and foremost, thank you Trey for the ease of setup on this. Really appreciate all the other folks too who built on/from this. I just have a question about once it's up and running. There doesn't seem to be a way at all to find nor edit the server.cfg, much less have a custom.cfg to load player configuration. Am I missing something? Thanks in advance, folks.

Still banging my head against this wall here -- is there a folder to set to override the server.cfg that's included in with the docker image? @treyyoder @red-avtovo
