By definition any shell collected would be collected dead and since living molluscan (and other shelled animals) could be collected live at the same place and time I wouldn't exclude them from this property.

In the progress meeting we discussed including an option for 'presumed dead', would 'unable to determine' be better?

I'm fine with "unable to determine." Also, I found an alternate definition for "death" here http://vocab.nerc.ac.uk/collection/S13/current/S1347/1/.
