I have been able to GPU mine on my Mac (Sequoia 15.1.1) up until Tari Universe v0.7.XX & v0.8.XX.

These versions give me the warning:
⚠️GPU disabled because your hardware does not support it

Nothing else about the Mac has changed, other than updates to Tari Universe. This issue can be reproduced by running Universe v0.6.XX on the Mac to demonstrate GPU mining works, then upgrading to 0.7.XX or 0.8.XX. Pool mining is enabled.

Thanks for opening the issue. The M1's seem to be very divided about whether they want to show up for mining or not. Seemingly the same systems are 50/50.

We will continue to investigate this and update here once we find something.

Just an update: We think we've found a possible cause for this that we'll be rolling out soon.
