Remove inv_jacobian functions from maps

In #6223, the main calls to the inv_jacobian functions of the coordinate maps are replaced by numerically inverting the product of the map jacobians. The remaining uses of the functions could also be replaced by numerical inverses, and there isn't any obvious advantage from keeping the analytic inverses around.
