Update all Sigstore components to their most recent versions

Each of the individual Helm charts that comprise the set of Sigstore charts should support the latest set of capabilities provided by each component.
Expand the existing feature set to take advantage of the latest set of features.
This task is about updating all charts to use the newest available images and to investigate how this could be automated (That might save @cpanato from some extra effort ;) ).

Acceptance criteria:

• Each chart makes use of the newest version of its service
• The newest features can be leveraged without having to hack or modify the helm charts
• A way how to auto-update the images has been investigated and ideally found
