When I run the euroc_mav dataset following the ros1 tutorial, nothing shows up in rviz after rosbag[

It looks like you do not have the correct rviz profile open. You can try to manually open the profile.
You should run roscore first, then launch rviz and open the config we have provided (or recreate it yourself by looking at rostopic).
Then you can play the dataset and get the output shown live.
