What I did now is to provide English in LICENSE.txt and German in LICENSE_DE.txt.

This could get tricky regarding differences in translations but the approach you're taking with separate license files per translation sounds like a good approach. I'd also recommend including the SPDX identifier for the license in the README just as an extra precaution
