Media Gallery issues: captions do not follow theme & formatting throws off PDF+EBOOK

Prerequisites

• Can you reproduce the behavior you wish to address with all plugins except Pressbooks deactivated?
• Are you running the latest version of Pressbooks, the latest version of McLuhan, and the latest version of WordPress?
• (all themes) Are you experiencing the issue while using this book theme?
• Did you perform a cursory search to see if your bug or enhancement is already listed?

Description

1. In singular images pulled from the media library, when they are given a caption, they follow the theme. However, when you create a gallery and add captions, the captions do not follow the theme.

2. Gallery throws off formatting in PDF and EBOOK. In EBOOK, captions seem to follow theme. In PDF, captions do not follow theme.

Steps to Reproduce

1. Create a Gallery (Add media > Create Gallery in edit mode). Add captions on to images.

2. Export in PDF and EBOOK and observe formatting issues.

Expected behavior: Gallery image captions follow theme and formats correctly as a gallery (images in a single line) across all formats

Actual behavior: Defaults back to McLuhan theme captions and does not format correctly in PDF and EBOOK.
