Maybe ask Rockstar, they are the devs of the game. And even they didn't port it on macOS (except that steam version which was just packed emulated pc version using wine).

Use Wine, either with Winetricks or CrossOver, but the launcher GUI have an issue on the dependency (WebView2). So, you can launch it by command line to connect to the server directly.

If you're using Intel, go for Boot Camp or virtualization.
If you use Apple silicon, go for virtualization (Parallels or VMware Fusion).
