Mongo 8.0 upgrade

Mongo 7.0 Support is dropped in Oct 2026 August 2027 and we'll still need mongo then so we should upgrade to the latest so we don't have to worry about a running a version that's not supported and not getting security updates.

Just a note that it looks like we have until August 31 2027, as per https://www.mongodb.com/legal/support-policy/lifecycles.

Ah, thanks, I'll update this ticket, we'll want to land it before we cut Xylon but given our mongo usage it should be a pretty quick bit of maintenance. By then it will only impact edx-platform.
