What needs doing?
For #550, we want to remove some old projects. We should replenish these with more recent cool things that we've done.

Plan

Identify new projects that we'd like to display
Locate a copy person and someone with good experience of the project and its outcomes
Write some content
Make an image
Add to the src/data/projects directory
