Test models during build process / object versioning

I noted that the models being downloaded as part of the build process are downloading "latest" object. I am unsure if these are being retrieved from an S3 bucket with versioning being enabled. The objects should be versioned and specific versions should be retrieved by cmake so the configuration is known and builds are reproducible.
