Add support for Java 18, 19 and 20 #52

We should ensure that Jamm works properly with Java 18, 19 and 20.
There is 2 parts to it.

Adding those versions to the Maven files (pom.xml and toolchains.example.xml) and to the CI scripts.
Checks the different Java versions for changes that might affect the memory layout and that might not have been picked up by the tests.
