Uncertainty Quantification (UQ) for multi-class models

Currently, the UQ implementation is built around the assumption that the target is a binary outcome, although some flexibility for multi-class uncertainty has already been implemented. This needs to be finished. In the meantime, errors should be raised if attempting to use multi-class models with UQ enabled.
