Really struggling to get this started on M1 MBP

Trying to run this in the most simple form and finding errors everywhere. Below is the command line output:

When trying to follow the instructions to open the xcworkspace, it also fails:

I have tried older versions of the CLI and they just hang and I am out of ideas on what I could even do to progress anywhere.

For context, I've got other Expo and React Native projects that build and run just fine so I am unsure why this would be a problem.
