Geoserver release 2.25.0 has been released on March 19th, 2.24.3 two weeks ago.

Would it be possible that you publish these versions on docker-hub?

Yes, we've already planned this activity, The new images will be available soon

Geoserver versions 2.25.0 and 2.24.3 are now available on Docker Hub. I pulled and tested both of them, working correctly.
