Eclipse now has a python script for easy launch: eclipse-jdtls/eclipse.jdt.ls#2005

So this is the plan:

Provide installer + updater
Provide native support for Linux (without needing to install python)
Provide native support for Windows (without needing to install python)
Provide support for having multiple instances at the same time (use a variety of ports, is this even possible?)
