The line -

docker run --rm -v/Users/dawid/Downloads/cc65-tools-main/tutorial:/mnt/project dawidbuchwald/cc65-tools-make test

should, probably, include the drive letter in the local path -

docker run --rm -vc:/Users/dawid/Downloads/cc65-tools-main/tutorial:/mnt/project dawidbuchwald/cc65-tools-make test

At least, the letter is required on my Windows 11 computer.
