Try installing texlive-science texlive-fonts-recommended texlive-latex-extra, this is what we use on the CI environment which seems to be working

If this ends up working for you please open a PR that updates the README with these packages

actually the problem seems to be a missing inclusion of a needed package, cf. commit 5a5273c of #141
