Update Rollbacks page for latest functionality

What changes are you suggesting?

There's a pending change that'll let folks:

• Split a deployment across two versions
• Promote one of the versions of a split deployment to 100%
• Rollback

The docs are already out of date as we can already rollback to the last 100 versions.

/bonk while we're at it, can we rename the gradual deployments page (https://developers.cloudflare.com/workers/configuration/versions-and-deployments/gradual-deployments/) to split-deployments and add a redirect for https://developers.cloudflare.com/workers/configuration/versions-and-deployments/gradual-deployments/ to https://developers.cloudflare.com/workers/configuration/versions-and-deployments/split-deployments/ ? you might need to search for references in the docs to gradual deployments and update them to split deployments too
