Document the steps for transitioning Jekyll site to Eleventy in production

We are planning to cut over to the Eleventy version of cg-site. Since the site is already in production in Jekyll, there may be some complications that would need to be understood ahead of time. This issue is to uncover the potential steps required to make the cut over with minimum downtime.
