Cleanup docker networs

When I ran some e2e test in ev-node in a loop (20 times), I got failures from the docker daemon about networks availability. My quick workaround is adding docker network prune -f into the loop to release them. It would be nice to have the network cleanup included into tastora.

Please note that tests do not always succeed. This may be cause that some cleanup code is not executed.

this issue should be resolved by #145 which will be included in the next tag! We are not using consistent labelling in tests independent of t.Name()

I'll close this issue, if it persists after upgrading to https://github.com/celestiaorg/tastora/releases/tag/v0.8.0 we can re-open.
