Perform operations over collections (especially DocSets)?

Context

In the January 13th, 2021 community meeting, we talked about carvel-ytt#251.

As part of that conversation, we want to see a wider set of examples — hopefully both a) supplying a more diverse set of situations so that we could generalize from a set of concrete examples and b) motivating the need for such operations.
