Update Minio chart

When working on deprecating Merlin helm chart in caraml-dev/merlin#391, I found that caraml-dev/helm-charts is using deprecated versino of Minio helm-chart.

At this line: https://github.com/caraml-dev/helm-charts/blob/main/charts/merlin/values.yaml#L548
Merlin uses https://helm.min.io/

Minio recommends to use https://github.com/minio/operator/tree/master/helm/operator
