When the Classic Editor plugin is installed on a site, the WP101: Classic Editor playlist appears, which it should. However, the WordPress 101 and WordPress 101 Intro playlists are still visible, and those are intended for users who are using the Block Editor.

WordPress filters

Related to that, the changelog for version 4.2.1 stated: "In addition to whether or not the Classic Editor plugin is installed and activated, this minor fix also checks to see if filters are being used to disable Gutenberg. If so, display the previous version of our WordPress 101 videos instead of the new videos for Gutenberg and 5.0. Thanks, Cliff Seal!"

Apparently that change didn't make it into the 5.x rewrite?
