Reduce bloating of main wp database for people that want to log everything and KEEP logs as proof (such when required by GDPR).

Should not be that hard. A couple of more fields in settings to define database connectivity and use of the same wpdb class as explained here: https://wordpress.stackexchange.com/questions/1604/using-wpdb-to-connect-to-a-separate-database
