[feature request] docs for IRC catalog connection

Feature Request / Improvement

I think we can improve the REST catalog documentation https://py.iceberg.apache.org/configuration/#rest-catalog

Specifically, it would be great to clarity

• auth (oauth/credential/token/sigv4)
• oauth2-server-uri
• the warehouse param (see Add warehouse parameter to the REST Catalog doc #2066 (comment) and Add warehouse parameter to the REST Catalog doc #2066 (comment))
• header, header.X-Iceberg-Access-Delegation
• credential vending
• remote-signing

And perhaps common REST catalog configurations

• Glue IRC / S3 Tables IRC
• Polaris
• UC IRC
• Lakekeeper
• R2
