Add Convex Finance pools and Solidity interfaces

Challenge Description

The bounty is to add Solidity interfaces (use for building DeFi Adapters) as well the Convex finance's pool data (used for unit testing DeFi Adapters as well as building opty-fi's megagraph)

The overall goal of this bounty is modularize and keep the opty.fi's yield protocol maintainable.
