What do you want to work on?

I want to fix the sandbox policy quickstart documentation to make blocked requests and denial logs visible.

Why this change?

I tried to manually follow the demo in https://github.com/NVIDIA/OpenShell/tree/main/examples/sandbox-policy-quickstart but ran into a couple minor issues that could use cleanup (e.g. silent curl output, warning level log filter).
