More Bedrock Model Support

Description

Assuming AWS has better uptime percentage, it would be good to support more of their models for enterprise customers. Specifically I'm interested in the following models:

Claude (latest)

Meta (latest)

Providers that have existing clients like Cohere should be straightforward to add.
I took a look into Mistral and Meta and those are a bit more complex so we will add them at a later time once we figure out a good interface.
