unstructured docker image doesn't seem to have support for Apple Silicon macs

It seems that unstructured doesn't have support for Apple Silicon. I see a similar error mentioned here when docker images are pulled Unstructured-IO/unstructured#3643

"no matching manifest for linux/arm64/v8 in the manifest list entries"

Ah, found this one: Unstructured-IO/unstructured-api#480. Seems like one can use the Linux ARM64 version.
