Expose all server information as Prometheus metrics

The prometheus_metrics options exposes all statuses as Prometheus metrics. Since the manifest is already parsed as well, it would be really nice if the information from that manifest (in particular things like the root catalog size, revision number), and potentially other information that we obtain about the servers, could be exposed for the different servers as well. The monitoring server can then collect all of this in one go.
