Can we please get a demo on using the tableformer model for inference, similar to the layout model?

@mohit-raghavendra , its in https://github.com/DS4SD/docling-ibm-models/blob/main/tests/test_tf_predictor.py there is a JSON used in this code, you need to make your backend parser output equivalent to this (IOCR); let me know if you have found something else or if your use case is different
