Would like to know if the project has any date to be launching the pnpm version.

There is just is no version, yet.

All preparations were taken, so somebody could step in and start implementing a PNPM solution.
All in the spirit of

Thank you for your interest in a solution.

Some proof of concept have been made, just to showcase technical feasibility.
So far, no real contributions were made; no official CycloneDX SBOM generator dedicated to PNPM exists at the time of writing.
If you or your organization are interested in a solution, let me know so we could collaborate.
