Some things that could be added to celestia.cfg:

SplashImage (see Celestia splash screen #438)
Language (see Double names #441)
Label colors for all object types
Orbit colors for all object types (see Pluto's orbit #463)
Star render distance? (see Increase star render distance #503)
Zoom/magnitude limit? (see EHT-like zoom limit #597)
Virtual texture level limit?
