Currently it doesn't seem to be possible chooses which encoding we want to apply to the columns.

Only available options are to:

  • Set the value for withDictionaryPageSize()
  • Enable or disable DICTIONARY encoding via withDictionaryEncoding()
  • Set withByteStreamSplitEncoding()

It seems like specifying encoding is not possible, raised a question in parquet-java to clarify that: apache/parquet-java#3051
